The white beans were worth the wait. I cooked them for 2 more hours then made chili. They are perfectly tender almost mushy now. Vegan christmas meal is made! (We have a vegan side-menu for dinner, as we have a vegan joining us. Green chili with red pepper garnish.)

I soaked them overnight. I was very drunk from my birthday and remembered, which is the first gaywitchmas miracle. Now I have been simmering/boiling them for about an hour. I am going to Brian’s at 3 and chili needs to be done by them. I’ve never worked from dry beans before. This is stressful.
